What to do with those Thanksgiving leftovers?

I’m writing on this day to tell you a couple things: 1) Don’t feel bad about indulging on Thanksgiving Day; 2) If you’re GONNA feel bad, I have some advice.

Start with a  two or three mile walk. At least you’ll work off some of that pumpkin pie you devoured.

Start with a  two or three mile walk. At least you’ll work off some of that pumpkin pie you devoured.

And do it every day this weekend. Two or three miles a day. News flash: We live in California, not Buffalo. It’s beautiful! Take advantage of it.

But on to the leftovers. I mean, two or three helpings on Thanksgiving Day are great, as well as visiting with loved ones, but can we be honest for a moment? The rest-of-the-weekend leftovers taste just a LITTLE bit better, don’t they? Especially if you’re camped in front of the TV, watching an exciting football game (apologies basketball, we just can’t be bothered with you for the time being; contact me when your 82-game season is, oh, halfway through, and the games began to matter).

With that in mind, here are three ways to make those leftovers, and your weekend, more glorious than they already are:

THE SANDWICH

The great thing about leftovers is you don’t have to replicate the Thanksgiving Day meal. Improvise! Add some some zing! The Thanksgiving Day sandwich staple is as easy as it gets: First, use wheat bread, with a mustard spread. Add neatly-sliced turkey, apply cream cheese on it, add the cheese of your choice, lettuce, tomato and a dab of cranberry sauce and… heavenly.

THE SOUP

Keep it simple. Turkey broth and cut-up cubes of turkey. Add veggies. Squeeze a lime into it to add a zingy citrus flavor. Other herbs and spices that will bring it to life: celery salt and pepper, Italian seasoning, turmeric, garlic,  onion and oregano. Boom. Now all you have to do is plug in your movie of choice and enjoy paradise.

THE MASHUP

Teenagers will appreciate this, but for those who aren’t teenagers, admit it: We’ve all got a teenager within. Get yourself a bowl or high-edged plate. Put anything and everything you like in it. Turkey. Mash. Cranberry sauce. A broccoli and cheese casserole. Pie. Beer (why not?). Now… grab a HUGE spoon and stir the entire goodness together. It makes no sense until you eat it. Then it makes all the sense in  the world. You’re 17 again! You’re immortal! Add a donut if you like…
